Studies from Japan showed that there is a strong possibility that the edible mushroom Flammulina velutipes prolongs shelf life of tuna meat.   An extract from the edible mushroom.

According to study results, mushroom extract not only prolong shelf life of the tuna but also stabilise the color of the product. If compare with untreated tuna meat, mushroom extract treated has 6 days more shelf life during cold storage.
The loss of the color, texture and taste is due to oxidation. Due to oxidative spoilage cause discoloration, mushroom extract stabilise the color of the fish.

Specialist think that the industry will prefer mushroom extract as a preservative instead of artificial substances like BHA and BHT.

Sudans are red dyes and used in oils, beeswax, petrol, shoes and floor polish to colorize them. It is forbidden to use them in food as a coloring agent.

Sudan dyes are found in chili, paprika powder and palm oil imported from India and United Kingdom from 2003 to 2005. At the same time sudans are found in the products that included imported chili and paprika powder.
Sudan Red 1 is a chemical azo dye and defined as carcinogenic by Cancer Research Center. Products are strictly controlled if they contain Sudan Red I, II, III and IV  in most of the countries.

From July,2003 for exporting red  chili and paprika products, The certificate shows that product does not contain sudan dyes must be taken for each lot. To analyse the products, the sample must be taken from bulk randomly.
